1. Mix one crushed garlic clove, the olive oil, the peppercorns and mustard. Spread the mixture on each side of the steaks and leave to marinate for at least 15min.
2. Make the aïoli, mixing the remaining crushed garlic with the mayonnaise, lemon juice and seasoning.
3. Barbecue or grill the steaks for 3-4 min each side. Allow to rest in a warm place for 5min before serving.
4. Serve with the aïoli and, may we suggest, Channel Farm potatoes!
